Father Dearest

Name your favorite TV or Movie Dad.
Probably Hal Karp from Undeclared. The show was only on for one season, but it's one of my all-time favorites! Hal tried SOO hard to spend time with his son, but Steven is in college and wants to be left alone. Hal ends up spending much more time in Steven's dorm than needed.. but all of his friends really like him and welcome him into their group. Here is a clip I found on Youtube dedicated to "Steven's Dad"... Enjoy!



What's the best thing about your Dad?
Growing up he worked long hours, usually during 3rd shift. So, we didn't see him very much except at dinner time and the few hours afterward before we'd head off to bed and him to his job. But, he would ALWAYS be there to watch our extracurricular activities. I was in band, played lacrosse and softball. My dad would always be in the stands rooting me on. My sister, Elizabeth, was on the track team. She will be the first to tell you that she was the worst runner they had. But, he'd be at every home meet, cheering her on with pride written all over his face. He was always so proud of us. I know that he has a hard time expressing himself, but the fact that he always made a point to be there at those moments for us means the world to me.


What's something you enjoyed doing with your Dad when you were a child?
My Dad treated me as a second son growing up. My brother is the oldest of the 7 kids in my family, and by the time I was 6 he was off to college. So, my Dad desperately needed another "male" around to help him stay sane. Enter Emily.. the tom boy! He would take me to Indy car races, drag races and I'd help him tinker with his '31 Model A Ford from time to time. I had never been a big fan of barbies, pink and dresses, so it was a good excuse for both of us to get away from all that estrogen running rampant in our home!

What makes your husband a great Dad?
Everything. His willingness to help me out with Aidan, the overwhelming love he displays everyday for our son, the smiles he receives when they play together.


Tell us a funny story about your husband or Dad.
My Dad lived for our family vacations when we were younger. We'd take great trips across the country, with Dad planted firmly in the driver's seat. For years he would always wear an old derby hat on his head on vacation and every morning as we sleepily piled back into the car he'd start to sing "On the road again..." by Willie Nelson.


Do you have any great father's day activities, crafts or recipes you can share or link to?

Any dad will love these easy, mini chocolate pies that I made last week!

Mini Chocolate Pies
Ingredients
1 pkg. refrigerated pie crusts (should have 2 crusts per pkg)
1 pkg Jell-O instant chocolate pudding mix
Redi Whip

Directions
1. Preheat oven to 425F.
2. Unroll pie crusts on flat surface. Using 4" round cookie cutter, or wide glass cut circles out of pie crusts. Bunch up and re-roll out remains until flat and continue cutting out circles until crust has been all used up.
3. Place crust circles into pre-greased muffin tins. Pressing firmly so they fit snugly into muffin cups. Bake for 8-10 minutes, or until golden.
4. Pop mini crusts out of tins and let cool.
5. Meanwhile, prepare pudding according to package directions.
6. Once crusts are cool, fill with pudding and top with Redi Whip.

  1. This was a great post, Emily! I actually remember watching an episode or two of "Undeclared" and thinking it was pretty funny. :)

    I LOVE that your dad took the time to cheer you guys on in your activities. My dad did the same when I played soccer (I rarely got off the bench Freshman year), and he was so proud when I made the cheerleading squad.
