{Lemon-y} Lemon Bars

So, I don't know about you... but I LOVE all things lemon-flavored. Especially desserts. One of my all-time favorites is lemon bars. So, today I'm sharing my amazingly awesome recipe for lemon bars! I've been making this recipe for at least 8 years, and I have to say, they're probably the best lemon bars I've ever had. I promise, you won't be disappointed. :)
Here's what you'll need to get started:

* 1 cup butter, softened
* 1/2 cup sugar
* 2 cups flour
* 1/4 t salt
Lemon Filling:
* 4 eggs
* 1 1/2 cups sugar
* 1/4 cup flour
* 2-3 lemons juiced, plus grated rind
* powdered sugar to dust top

First, preheat your oven to 350 degrees. Then, mix together your crust ingredients. Spread into a greased 9x13 pan. Bake for 18 minutes, or until lightly browned.

While your crust is baking, get to work on that delicious filling! I start by grating my lemon rind. If you don't like as much lemon flavor only use the rind of one lemon. If you like a lot, I suggest using three! (My name is Emily and I am addicted to lemons. The more the merrier!)
Next, squeeze the juice out of all of the lemons. Again, if you don't want as much lemon flavor, I suggest cutting back on the amount of lemons you use. Try using the juice of just two lemons. A little trick I'll let you in on is this: squeeze your lemons into a small bowl first. Then, place a strainer into your larger bowl and pour your juice into the strainer. This way, the strainer catches all of your lemon seeds. I'm a genius, I know. ;)
Add all of your filling ingredients into a bowl and mix until well combined. Pour it on top of your baked crust and pop it back into the oven for another 20 minutes.

Voila! Aren't they beautiful? Look at that beautiful yellow color! Mmmm mmmm good!

Dust a bit of powdered sugar on top and spread with a knife or spatula to evenly distribute. Let them cool completely (atleast 45 minutes), then cut into squares.

I took these to a Mom's Game Night last week and they were a hit! Make them this weekend, your friends and family will thank you. :)
